10 Tips to Achieving Success in the Kitchen!

We all want to waltz into our kitchens with unshakeable confidence and create something equally beautiful as it is delicious, right? A perfect afternoon spent in the kitchen with no hours wasted, pans burnt, or ingredients spilt is for sure the ideal scenario in our heads; but take it from me, things never go 100% according to plan. Even after five years immersed in the culinary industry and having picked up SO much food knowledge (plus all those episodes of Masterchef on TV 😜), I am still more than capable of screwing up a recipe that I've made dozens of times before. Sigh, I'll never understand it.
And although expecting a perfect outcome every single time is quite the unfeasible goal, we can still do everything in our power to get as close to smooth-sailing as humanly possible. We can!
Those of you who are well seasoned in cooking, baking, and all things culinary, these tips may be considered common sense to you. To be honest, I have assumed that these are as well known to everyone else as they are to me. But this totally isn't the case! If there's one thing I've learned over my 26 years of life it's that just because I may know a certain skill, it doesn't mean that my friend, husband, co-worker, or Mom know it too. The best written work comes from people who write about what they know, so imagine if we all wrote about our knowledge and personal experiences--we'd learn so much from each other!
So here we go, these are my 10 best personal tips for achieving a successful cooking and baking endeavour!

1. Read Over Your Recipe Carefully.

When going off of a recipe--before you even start preheating your oven--read the entire thing from beginning to end. Skip over nothing so you miss nothing! You do NOT want to end up with a bunch of surprises half way through. Also, ask yourself the following two questions to avoid any other surprises:
Do I have the necessary equipment to execute this recipe? Wait, I need a muffin tin to bake these muffins?! 😂 Or: I need a whisk attachment to make this meringue?! Oops.
Do I have enough time to do this recipe? You don't want to promise your friends at that party in two hours that you're gonna bring a pan of homemade cinnamon rolls if you haven't even started prepping it and only now just realized that it takes over an hour to proof the dough. I hate to be the bearer of bad news, but you're gonna be sooo late to that party, unless you're a cheater and opt for the grocery store cinnamon rolls instead.

Remember, some recipes don't have to be executed at one time. For instance, when I bake pies I always make my pie dough the night before, which means I only have to focus on my rolling, filling and assembling the following day. When I bake cakes or cupcakes, I bake my cakes/cupcakes the day before and fill/frost them the next day. It's so much more enjoyable when all you have left to focus on is the piping and finishing touches (also known as, the fun part)!

2. Check Your Ingredient Supply.

This is a huge one for me. Whenever I'm about to bake something, I'll put the recipe on the kitchen counter and read through each ingredient listed one by one, scanning my pantry shelves, cupboards, and fridge to see if I have those ingredients. If I don't, I write down the ingredient AND its quantity on a piece of paper or on the Notes app on my phone. (Writing down the quantity is important too because in the past I've written down that I needed confectioners sugar, only to realize later that I only bought half the amount that I needed.) Even though I only live literally a minute drive from the nearest grocery store (which I'm SO grateful for), there is nothing worse than starting to work through a recipe after already making a grocery-trip only to realize I forgot to buy an ingredient or that I didn't buy enough of it.
This means I have to put my shoes back on, grab my purse, run down the stairs, get into my car, drive to the grocery store, find a place to park, speed walk all the way to the back of the store (why is that one ingredient always furthest from the check-out?),  make a mad dash to the checkout, wait in the longest "express" line ever because you just remembered that it's Saturday and EVERYONE decided to come here too, run back to my car, get stopped at that annoying red light on the way back to my apartment, park my car, run up the steps, and then continue on baking feeling all out of sorts all because I forgot that ONE ingredient. Friends, I beg of you--learn from my mistakes and carefully check your ingredient count.

3. Begin With A Clean Kitchen.

There's nothing more satisfying than beginning your baking adventure in a sparkling clean kitchen! Now, how does that saying go again? A clean workspace is a happy workspace? Well, it's totally true. Not only is it way more sanitary for the food you're about to eat, clean countertops provide a sense of organization and motivation. I know that if I'm in any room in general that's super messy I can't think straight and grasping for a sense of focus is ill-fated. Also, when my counters are already spotless, it makes me more inclined to keep them in that condition which brings me to my next point...
4. Clean-As-You-Go.
The first time I had ever learned this concept was during my time in culinary school. We'd actually lose grades for having a messy workstation. Why, you ask? Go work in any commercial kitchen--your executive chef will lose it on you if you're cooking in a mess. A messy kitchen is unsanitary, and it decreases surface area (there is NO kitchen with more-than-enough counter space to begin with). But worst of all, it's a horrible feeling to turn around after putting your cake in the oven only to discover that a tornado has obnoxiously made its way through your kitchen. When did this happen?! The sight of all those dirty dishes and buttercream-smeared counters is overwhelming and if anything it makes you just wanna crawl up on the couch and call it a day. The concept "clean as you go" can be executed like this: I just used this knife to slice a lemon into wedges, so I'm going to immediately go to the sink, wash it, and lay it on the drying towel next to the sink.
I like to keep a big bowl of hot soapy water in my sink so that I can toss dirty utensils in there and let them soak/disinfect as I continue on cooking/baking. Keeping dirty dishes and utensils soaking in water keeps the food from hardening onto it thus, making it a breeze to clean!

5. Mise En Place Your Ingredients.

This fun and fancy french word means to "put in place"; it's a concept that I also learned in culinary school/every cooking show that's ever been on TV. It means to read through the recipe, measure and prep each ingredient, and put them all into individual containers or bowls. (Dollar Tree/Dollarama sell these little packs of bowls for cheap! Personally I love their little glass ones.) When you take the time to carefully measure out each ingredient before mixing anything together, it's rare that you'll make a mistake such as neglecting an ingredient or mistakenly adding an ingredient twice because you forgot you already added it!
I'll be honest with you, I don't always practice "mise en place". Even though it's so helpful, sometimes my laziness takes over. Since I try to hand wash everything I bake with, the more bowls I use for mise en place, means the more bowls I have to clean. And seriously, can't we all just agree that washing dishes is THEE WORST part about baking?!

Although I don't practice mise en place as much as I should, I am however really good at putting ingredients away right after I use them. My personal more frequently used version of "mise en place" starts with me putting every ingredient that I need onto the counter. As soon as I'm done measuring and adding an ingredient to the mixing bowl such as chocolate chips, I immediately wrap up the bag tightly and put it back in the cupboard. As soon as I've scooped and measured my little teaspoon of baking soda, I put the container back in the cupboard. This gives me visual affirmation that I've already used this ingredient, and no longer need it (in case something distracts me and I forgot). Out of sight, out of mind!
6. Take Notes.
A super helpful thing to do is to print out a recipe, and as you're working through it take notes on literally everything. This will seriously help you when you find yourself making this recipe again in a few months and have already forgotten how many extra tsp's of lemon juice you added last time to make the perfect lemon cake.
I'm just going to be blatantly honest here, I am horrible at taking notes while baking and cooking. I just want to get things done as quick as possible and feel like taking notes will slow me down; once again my laziness gets the best of me. BUT, this is something I am seriously striving to get better at. I even bought a bunch of sheet protector sleeves and a binder to keep my recipes in, safe and secure. So unfortunately no, I have not taken notes for every single recipe I've conquered, but I have for some and here's an example of them:
1 tsp vanilla 2 tsp vanilla.
The batter is very thin--this is normal.
Cupcake tins need to be filled up to the top.
A medium cookie scoop made 24 cookies, a small cookie scoop made 36.
This recipe yields 24 cupcakes, when doubled this recipe yields 3 8" round cakes.
2 lemons = 6 TB lemon juice and 3 TB lemon zest.

7. Stay hydrated/energized.
I can't even tell you how many times I've started a baking endeavour on an empty stomach. It's not really a huge deal if you're making something quick and simple like chocolate chip cookies (although it may entice you to eat most of the cookie dough 😏 ). But if you're tackling a layered cake project that takes a few hours, you can begin to feel fatigued and a little fuzzy-headed partway through. I don't know about you but fatigue and impatience go hand-in-hand for me and one does not want to lose patience over decorating a cake! The last time Jarryd witnessed me beginning to get frustrated whilst cake decorating he wasn't havin' any of it! He sat me down on the couch, made me some food, handed me a glass of water and made me sit for 30 minutes. I felt a zillion times better after that half hour breather was over; I couldn't believe that a little rest and replenishment was all I needed to bring myself some clarity.
Speaking of hydration, water is always a good choice, in general. I learned the hard way that drinking a Coke while trying to perfect my buttercream recipe was a bad idea because my palette was totally inaccurate from all the Coke sugars. 
8. Put some tunes on!
This one's totally optional, of course. I mean, I don't think there's scientific evidence to back me up on the idea that music will lead to better tasting baked goods (wouldn't that be nice?). But, what I do know is that listening to music while working on a daunting task can make you feel a little more "loosey goosey" as they say. If I happen to be home alone, I'll turn our TV on to one of those music stations and turn up that country music reeeeeal loud. (If my husband is home, I'm usually baking to the sounds of UEFA commentators or Jarryd shouting joyous praises because Ronaldo just scored.) Other times, if I'm working on a brand new recipe that's quite tedious and complex, I don't want ANY sounds going on around me because undivided concentration is key. Because let's be honest, when your favourite song starts playing your whisk somehow transforms into a microphone and your kitchen is your stage. But I will say that playing music during the clean-up part is a fantastic idea. It helps to take your mind off of those annoying buttercream-clogged piping tips you've been trying clean.

9. Gather Up Inspiration & Look For Help.
If you're feeling stuck on what baking/cooking project you should tackle next, I go to the world-wide-web for inspiration. (I'm not a big cookbook person, I only own like 5 of them and truthfully they're gathering dust as we speak.) On Pinterest I type in "baking" or "desserts" and when a specific dessert catches my eye, I might use their recipe, but most of the time I turn to Google Search or AllRecipes to find a perfect recipe for it. (I LOVE AllRecipes--seriously, you can't go wrong with a recipe that's been given 4 or 5 stars with thousands of reviews!)
If you want to learn a new skill like how to lattice a pie, or how to make a sugar tuile, or how to perfectly boil water for instance: Youtube. After I finally purchased a huge set of piping tips and my cake turntable a few years back, I immediately went to Youtube and searched "buttercream roses" and that is where I learned how to pipe my very first buttercream flowers! Because I'm a visual learner, reading step-by-step instructions about what angle the piping tip should be at or the amount of pressure you need to give with your hand does nothing for me. Youtube tutorials however, do everything for me! Watching someone pipe a flower while explaining in detail their every move taught me tremendously and gave me a whole new skill in just one afternoon!

10. Nominate Some Taste-Testers.
When I was doing my first wedding cake back in April, I tested a cake, filling, and frosting recipe two or three times because I HAD to get it perfect. My number one most reliable, and HONEST taste-tester is Jarryd. He will never tell me something is good when it's not. And bonus, he has a killer palette (much more accurate than mine). My next go-to's are my in-laws because they too will give me honest feedback. You need people like that in your life because there are some folks who will just tell you what you want to hear or tell you something is perfect even when it's too sweet or too salty.
Nominating taste-testers is a win-win because your friends and family get to indulge in delicious (free!) desserts and in return you get honest critique!

Chewy Oatmeal Chocolate Chip Cookies w/ Walnuts & Sea Salt Caramel Chips


The other day Jarryd came home from work saying that his co-workers thought it'd been too long since they've had my baking (they all make my cookies disappear in a flash). So the next day (on my day off) I decided to bake my favourite cookies in the world: oatmeal chocolate chip cookies with walnuts. Being that I'm enrolled in Food Photography School, photographing everything I bake is an absolute must--gotta get that practice in!
So, I recently posted one of these cookie photos to Instagram and asked if any of y'all would want the recipe. I got a bunch of enthusiastic "Yes's!" from you guys in the comments and several requests outside of that as well! Thank you all so much! I almost DIDN'T ask because of my fears almost getting the best of me...what if no one wanted the recipe? What if people roll their eyes because there's nothing specifically complex or extravagant about these cookies? What if my comment section ended up being just the humiliating sound of crickets chirping? But ultimately, I'm so glad I swept those fears aside and decided to go with my gut because now I get to do what I love: share my tried and true recipes with you guys!

I'm not someone who is constantly sharing recipes on her blog--YET, because I only want to share the best. Quality over quantity, right? I've been baking these oatmeal chocolate chip cookies for YEARS and I can sincerely testify that these babies are delicious.
Now, if you're on a diet...you've come to the wrong place. Although, I'd love to convince you to have a little cheat day and bake these cookies! So just keep scrolling down and I'll let the chocolate chips and butter lure you in. 😉

Strawberry Shortcake Bars

The initial weeks after my big wedding cake extravaganza (on April 1st), I was all baked-out. Actually, I wouldn't even go that far. I was just exhausted. I was tired of being on my feet all day at work and then all evening after work. I was tired of spending my precious, much-needed weekends cooped up in the kitchen causing me to be too tired to see friends or visit family. I needed one of those weekends where I had no obligations, no reason to set an alarm in the morning, and no one to answer to (Jarryd being an exception, of course).

Easter weekend was on its way and showing up at the family gathering without a dessert in-hand would just be unacceptable. (Yes, I'm the "designated dessert bringer" and I'm totally OK with that!) I needed something easy, super quick to put together, and just stress-free...

Baking My First Wedding Cake.

Hello friends! Guess what? I baked my first wedding cake! OK, I'm sort of lying. Technically, this isn't my first wedding cake, per say. I have done one once before but that was alongside a friend (a.k.a I had someone to share all the stress and balance out the crazy emotions with).

Whereas this time around, it was all me, 100% me. (Note: I did have some help at the very end, but I'll get to that later!)
Plus, the first wedding cake I did was completely different from this one! It was an 8" round cake with fondant, sugar flowers, and cupcakes on the side. The wedding cake I did this time around was made up of TIERS, frosted with buttercream, and decorated with real greenery.

I wrote this blog entry so that I could share with you what this wedding cake journey was like for me, and perhaps encourage a fellow baker or two that you don't have to be a "professional cake designer" to execute a beautiful wedding cake. If I can do it, so can you!! So, let's start from the beginning, shall we?

Back in the Fall after our good friends got engaged, I received a pretty little card in the mail from the future-bride-to-be that said: will you do us the honour of baking our wedding cake for our wedding on April 1st, 2017?

Heart-Shaped Strawberry Hand Pies.

Hello, friends!! I feel like it's been forever since I've done a lengthy and detailed blog post dedicated to all things buttery, sweet, and delicious. With Valentines Day just around the corner (this upcoming Tuesday!) I thought it'd be best to do some heart-themed baking BEFORE the big day rather than after. I remember last year I did my big foodie-blogger debut of beautiful chocolate-covered strawberries almost a week AFTER Valentines Day had already passed. Oops. And despite it being about the time when everyone's already soooo over the heart's and XO's, that blog post received fabulous feedback among friends and family and encouraged me to keep pursuing my love for baking. So here I am, one year later with strawberry heart-shaped hand pies busting my belt under my belt.
Truthfully I wanted to get started on Valentines themed baking in mid January, but with that month being so...difficult, the heart-shaped-everythings had to wait. To explain, I was sick and feeling under the weather for about 3 weeks, and then Jarryd's grandmother passed away at the end of January. It was a month of sickness, hospital visits, tears, and grief. So, baking didn't even stand a chance. Although I did bake two different large batches of cookies for the funeral so that was good for my baking-spirits. In conclusion it was a very hard month, but also good at the same time. All I can say is that you don't grow through the easy times, it's the rough gut-wrenching seasons that make you stronger. 💕

Cookies and Cream Layer Cake {My Birthday Weekend}

I'm 26! I'm Twenty-six years old, and so far it feels better than twenty-five did! It's crazy to believe that I'm now on the climb to thirty, or would it be better phrased as falling down an inevitable steep downward slope? I vaguely remember back in the day teasing my 9-years-older-than-me-brother about how he was turning 30 and calling him SO OLD and such. And now, I'm officially on my way to that same "old". (Well, in four years at least!)

Now, onto my birthday weekend. But first, let's rewind a bit here. Three years ago Jarryd and I were invited to a lunch/watch football/play games day at our friend's Jon and Michele's house, where our friend Cameron met Jon and Michele's niece (A.K.A his FUTURE WIFE) for the first time on sort of a "blind dinner party date". We were all having so much fun that we ended up staying not just for lunch but DINNER TOO. (That's how you know it's good!) The two singleton's hit it off and three years later they're happily married! And not only did they hit it off, but the six of us as a "couples" group did too! So, the following year we decided to keep up the tradition and do it again! And now, for the third year in a row we had the same plans set--Sunday lunch immediately following church, games and football in the afternoon, and pizza for dinner. And this time I brought a cake with me!! 😃

Lemon Raspberry Muffins With Streusel Topping

We are now six days into the exciting and hopeful year of 2017 and I can confidently say that it already has not gone according to plan. Truthfully I didn't have much of a plan, but I at least envisioned myself being a healthy person full of energy and productivity.

It all started with New Years Eve weekend, where I was sick as a dog...with a COLD. It was honestly the worst and weirdest cold I have ever had. I say worst because it actually had me bed/couch-ridden, a cold has never done that to me before. I even had to call in sick to work (after a three day weekend yet!) it was so bad; and I say weirdest because I woke up Saturday morning feeling completely deaf. Both of my ears were plugged and my nose too; not to mention my head was aching like crazy. This is Maryland climate I tell you! When I lived in Canada my colds consisted of a dry hacking cough that's constantly itching. In Maryland my colds are all in my nose and ears. This type of cold has definitely been a first for me.

My 2016.

HAPPY NEW YEARS EVE! What a crazy, exciting time of year and I can't even believe the beginning of January is about to hit us!

For someone in my shoes, the months of October to December are nuts. I say "in my shoes" because I'm a Canadian who married an American and is living in America. Therefore, in October Jarryd and I celebrate Canadian Thanksgiving, in November we celebrate American Thanksgiving, in December we celebrate Christmas, and now we celebrate New Years Eve/Day! There are four major holidays all within the span of three months for us! (Thank goodness Christmas is the only holiday where gift-giving is expected, or else we'd be sooo broke!)

Last night in the car, Jarryd and I were just talking about how great of a year 2016 was for us. Thankfully, and I say this with a truly grateful heart, nothing drastic or tragic occurred in our lives. (Thank you, God!) We both conquered some things we wanted to conquer, and accomplished things we never even dreamed we'd accomplish. But, there's also things we wish we would have done more of, or wish we would have done less of. Obviously our lives aren't perfect and therefore our year wasn't perfect. But overall, despite how exhausting and busy the year may have been for us, 2016 really was a good year.

Our Third Christmas.

So, Christmas has come and gone. There's no more cars driving around dressed with an antler on each side and a big red nose in the grill, and Christmas music on the radio is nowhere to be found! 😢 I very much believe that Christmas music should be played until New Years Eve; half of us still have Christmas family gatherings and get-togethers after the 25th of December, so what gives? (Perhaps it would confuse the little ones if they heard on the radio that Santa Claus still has plans to come down the chimney at 12 that night...AGAIN?)

Christmas of 2016 was definitely one of a kind! I feel like Christmas for me isn't centered around the actual day of Christmas--I think it's the days and weeks leading up to it. I believe I really started getting into the whole "Christmas spirit" thing at the very beginning of December when I was flipping through radio stations on my commute home from work and came across a station playing ONLY Christmas music, and I was instantly hooked. For some reason hearing those first Christmas songs instantly cheered me up and enveloped me in a warm hug of nostalgia. 😇

The following blog post is dedicated to our favourite memories of our third Christmas together: Christmas of 2016. 💗

Firstly, one of my biggest dreams came true when I got to see New York City at Christmastime! This was my first trip to New York City where we actually stayed the night, which was also a dream of mine (because I've had one too many "day trips" there).

 You know those decked-out "shop windows" they all sing about in Christmas songs?! I got to see them and it was amazing! One of them even featured Canadian geese so that was a lovely surprise.
And see that giant green thing surrounded by scaffolding? Yep, that's the Rockefeller Center Christmas Tree being set up! I looked up the details of this tree, and it's a Norway Spruce from New York, and this year it was 94 feet tall! WOW. (Tallest on record was 100 ft!)

There was this one weekend near the beginning of December when I was feeling exceptionally cranky--probably because I spent my Saturday morning cleaning the entire bathroom and doing laundry all on an empty stomach and before coffee! (Bad move...) And I don't know if this is a human thing, a woman thing, or simply just a Jenny thing, but when I'm upset about one thing, it somehow connects to something else and something else again and again, therefore making me upset about EVERYTHING and henceforth coming to the conclusion that my whole life is falling apart. (Am I crazy?!)

So, me being upset about one thing lead me to believe that we probably won't even celebrate Christmas this year in the form of finding a Christmas tree and decorating our apartment and what not. No Christmas for me this year. I thought as I poured my tears detergent into the laundry machine. Now here's the amazing part! A few days before we'd looked everywhere for our Christmas tree stand! We couldn't find it and therefore thought we left it at our old apartment to be garbage-ridden. I don't know about Jarryd, but I certainly didn't feel like spending the money on a new tree stand, something we'd only use one month out of the year, so I thought for sure we wouldn't be getting a tree. But in the midst of my tears, Jarryd comes up and gives me a long hug--all the sudden he says "HEY! There's our tree stand"! It was hidden behind the laundry machine between the broom and vacuum. "Let's go pick out our tree now, ok?"
Me: "OK!!" 😅 💕
Off to pick our Christmas tree! (See! You can't even tell I was crying! 😆 ) Also, let's talk about how glad we are braids are back in style.
This is the breed of tree we picked out, "White Pine". (Is "breed" the correct term here?) I LOVE it so much, and I think it may be the only breed of tree I'll ever want for the rest of my life! Our tree only cost us $35--apparently because White Pines don't hold heavy ornaments very well, they're not in demand, which explains the uber low cost. And since I'm not the kind of person to put alot of ornaments on a Christmas tree, it totally works out for me. (But who knows, I'm sure my tree style will change over the years, you know?)
Bringing our tree home was a bit of an adventure--we borrowed my father-in-laws red truck and loaded it up in the box of the truck. That part was easy, it was the getting-it-set-up-in-our-apartment part that was rough--you see, we thought for sure we had 9 foot ceilings! So our 8+ foot tree absolutely did not fit vertically. Jarryd ended up cutting a few inches off the top of the tree with my serrated KITCHEN knife. (I was cringing the entire time because that knife came in my knife-kit from culinary school and it's made of high carbon German steel! 🙈 ) It was quite the adventure getting this big fat tree set up, and despite how stressful it got at times we couldn't help but laugh at ourselves.
Moving the hutch out of the way to make room for the Christmas tree called for serious hutch-trinket rearrangement. 


I had some serious goals for this tree and pink Christmas balls were on the list! (Shoutout to Jarryd for being the best husband ever and letting me put pink decor up in our apartment!!)


I bought the pink Christmas balls at Target, the gold balls at Big Lots, and the poinsettia flowers from Dollar Tree! I'm absolutely in love with the color scheme of pink, gold, and white.


Our Christmas card photo this year! We were literally in our PJs right before this, hopped into some nice clothes, set up the camera on self-timer, took like 10 photos, and then hopped back into our PJ's again. I promise one day we'll get professional photos taken!


Yes! We rearranged our living room in honour of our Christmas tree, which was a funny story actually. Jarryd wanted more seating in our living room, and that grey L-shaped couch was always kept in our office/second bedroom as more of a futon. So I told Jarryd, "trust me babe, I've rearranged this living room in every way possible trying to get those grey couches to fit in beside the beige couches and it's utterly impossible". Well, he's a persistent guy and really wasn't having any of that, LOL. I then told him "fine, go for it; I just don't want anything to do with it...you're on your own." (What a nice wife I am...). And low and behold he created this super cozy u-shaped living room situation which I absolutely LOVE! The beige couch acts as a room divider which is fantastic. So I ended up apologizing to Jarryd for not having faith in his interior decorating skills, because boy was I ever wrong!


I think we'll keep it like this forever (arrangement wise, not cleanliness wise--you should see the coffee table right now...).

Christmas chocolates are always a big deal. These Guylian seashells are amaaaaaziiing, and Ferrero Rochers of course, and Ghirardelli sea salt chocolates are a MUST.


Christmas card photos were sent out to our immediate family along with gift packages for our nieces and nephew! I'm seriously praying that one day we'll live close enough to our nieces and nephew that we can buy them gifts and give it to them in person without having to worry about how much the shipping will cost! Maybe one day. 💖


This was our one and only snowfall, On December 17th. It was rain, then snow, then ice, and then melted away with the rain a few hours later. So far, there isn't any call for snow in the upcoming forecasts which is just fine with me! I live for the warm weather!


Yes, I wore my Home Alone sweater on Christmas Day. Speaking of Home Alone, that movie is a HUGE Christmas tradition for me--my family and I would watch it every year! This year, Jarryd and I watched a ton of movies leading up to Christmas. We randomly watched The Santa Clause (LOL), Four Christmases (which is hilarious!), and every year we have to watch The Family Stone. If you haven't yet seen that, I highly recommend it--you'll laugh, you'll cry, and all the actors are amazing and very well-known.


Both Christmas Eve and Christmas Day were spent at the in-laws, where succotash is always a staple dish (cooked corn and lima beans). In the photo above, this was one of my favourite moments; when we looked through old photo albums of Jarryd's growing up years. What a cutie. There's something about watching old home videos and old childhood photos that give me the warm and fuzzies.

BAKING. On Christmas Eve I did so much baking! Firstly, I made these sweet dinner rolls.


Secondly, White Chocolate Macadamia Nut cookies. (Which I'd say were the biggest hit at the family gatherings!)


And thirdly, I made this Peanut Butter Crisp Triple Chocolate Pretzel Bark. Very rich, but very good. And bark isn't really my ideal dessert, but it was fun to try something new and expand my skill set!
Earlier in December I made these Unbaked Chocolate Cookies--these are definitely my ideal dessert, as I could probably eat a thousand of them in one sitting!


OH and the "Layered Cookbook: Baking, Building, and Styling Spectacular Cakes" by Tessa Huff was my early Christmas present from Jarryd. The only way I had even heard of Tessa was when I stumbled upon her Instagram page and totally fell in love with her baking style. To give you an idea of her amazingness, in the Good Reads Choice Awards, her book was #5, and she was the only one not associated/made famous through a TV show. She's just pure baking talent!

One of our Christmas traditions is to pick a movie saga to rewatch. Last year's was Star Wars (in honour of the Force Awakens) and this year's is Harry Potter!! Next year will probably be LOTR/The Hobbit, but we'll just have to wait and see! (And hopefully next year's Christmas will be in Canada!)

In full disclosure, Christmas this year turned out better than I expected it to because being so far away from friends and family over the holidays is tough. And despite Jarryd being horribly sick the entire weekend, and us being so busy having hardly any time to breathe, it was a great Christmas! God has been so good to us and we have much to be thankful for!

Lemon Blueberry Cupcakes With Lemon Cream Cheese Frosting

I know, I know, it's December! It's that glorious time of year when the only baked goods that you see at parties, gatherings, read about on blogs, and scroll through on Instagram consist of either gingerbread, peppermint flavour, or Christmas tree-shaped sugar cookies. But here I am, in the beginning of December, baking LEMON BLUEBERRY cupcakes. It all just screams a hot summer pool party in July, right?!
I'll admit, ever since I was on Pinterest and stumbled upon Ashley's Lemon Blueberry Cupcake recipe at Baker By Nature, I haven't been able to shake the urge to bake these! I honestly just couldn't wait 'till Summer to bake these; I had to bake them now! So...let's just pretend it's Summer for the next how-ever-many-minutes-it-takes-for-you-to-read-this-post Ok? Ok.
And I don't believe I've even tasted a lemon blueberry dessert before, which is crazy--but the thought of the combination of those two flavours, along with a sweet cream cheese frosting is incredibly enticing. I love lemons, I love blueberries, and I love cream cheese. So why not give it a try?!
Also, I haven't baked cupcakes in over a month, which is WAY too long to go without cupcakes in my books! (Here, here!)
So last Saturday morning, (at like 6 am because I have the inability to sleep in nowadays😩 ) I zested and juiced some lemons, I mixed together the cake batter, scooped it into cupcake liners, slid them into the oven to bake, and then whipped together the cream cheese frosting. (Oh and all of this was done whilst listening to Christmas music AND having my Christmas Balsam candle lit. Gahhh! How magical.) And the whole process was a snap! A total breeze.
The most time consuming stage of all of this was piping the frosting, garnishing the cupcakes with blueberries and lemon zest, and of course styling and photographing them! (Which is obviously optional because one could easily just scrape the frosting on with a knife and snap a quick photo of it with their phone!) But I love food photography so I couldn't NOT take photos of these beauties!
But the best part was the result. You guys!! These cupcakes were amazing! 😍 They tasted absolutely incredible. They had the perfect amount of lemony flavour, they were moist, the blueberries added a whole new dimension of texture and sweet taste, and THE LEMON CREAM CHEESE FROSTING was to die for. There's something truly exquisite about the marriage of cake and frosting; it's seriously a match made in heaven. (This is why cupcakes are better than muffins, right?!)
What do you guys think of my new piping design? I actually really love this and am thinking of making it my "signature" cupcake look! It's so frilly, ruffly, and pretty looking!
I even got significant praise from all of my taste-testers! They got the thumbs up from the husband, which is always important, right ladies? And also the thumbs up from my in-laws--aka my father-in-law the serious foodie. (I wish I could have shared them with all of you!!) Although I feel like I can hardly take any credit since this recipe wasn't created by me. It was all Baker By Nature's. I literally made this recipe exactly how it was written except...I halved the amount of lemon extract. But that's it!

Personally, I think the best way to eat these is when the frosting is softened to room temperature, with extra fresh blueberries on the plate, and a cup of hot coffee. The photo above was literally my breakfast last weekend! Cake for breakfast!

Hello Dolly Bars

Yesterday we decided to spontaneously invite Jarryd's parents over for supper! (The apartment was clean, so why not?) :P We have been dying to watch The Crown series on Netflix, and we knew that it would be a type of show that my in-laws would like, so we thought we'd make a whole evening of it! (I think that anyone who fancies Downton Abbey would certainly like The Crown). I mean, I was HOOKED already on the first episode--and it may or may not have been Hans Zimmer's astounding score that did me over. (Fun fact about me: I have a serious love for film score composers such as Hans Zimmer, John Williams, and James Horner to name just a few).

ANYWAY...with our dinner menu already all planned out, we hopped on over to the grocery store to pick up some steaks, sweet potatoes, and asparagus (did you know that the plural form of asparagus is actually just asparagus? Surprisingly, I didn't). Unfortunately we had the meal all figured out but had nothing for dessert! Not having dessert isn't the end of the world or anything, but I hate having guests over and not having any dessert or post-dinner sweets to offer them. I feel like it's so not me to not have sweets around.

It's always a little intimidating cooking/baking for my father-in-law because he's such a foodie and an incredible cook. But it's so nice to have people in my life who are not afraid to give me an honest opinion on my creations. And because they've tried so much of my baking already, I wanted to offer them a recipe that was tried-and-true, one that they'd never had from me before, and ESPECIALLY one that I could realistically and effortlessly whip together in a short amount of time. Standing there in the fresh meat aisle of the grocery store it suddenly came to me--Hello Dolly Bars!

I have made these bars a handful of times and they're always incredibly satisfying! My in-laws had never even heard of them before, so I wouldn't be surprised if you hadn't either. They're sweet, rich, and decadent bars made of the most amazing layers, starting with:
a buttery graham crust
semi-sweet chocolate chips
crunchy chopped pecans
sweet and chewy coconut flakes
and then poured over these layers is a can of sweetened condensed milk. *insert heart eyes here*

SO FAST. (10 minutes prepping, 30 minutes baking)

SO EASY. (The most "laborious" thing I had to do was grind the graham crackers in the food processor because I didn't buy the already-made graham crumbs, and melt butter on the stove!) Oh, and even better, they only require six ingredients!

AND SO DELICIOUS. (Anything made with sweetened condensed milk is going to taste AH-MAZING right?!)

Therefore, it was the perfect dessert to make for a spur-of-the-moment dinner party! And thankfully, these bars were a hit! Even the two non-coconut lovers loved them!

So, if you're looking for a dessert recipe that's simple, quick, freezes well, and has an amazing array of textures and incredible mouthfeel, this is the one for you!
HELLO DOLLY BARS RECIPE (Yields 12 bars)

1 cup of butter/2 sticks (I used salted butter)
3 cups graham cracker crumbs (14 oz box)
2 cups dark or semi-sweet chocolate chips
2 cups chopped pecans
3 cups sweetened shredded or flaked coconut
1 (14 oz) can of sweetened condensed milk

1. Adjust oven rack to middle middle position and preheat oven to 350 degrees F.
2. Melt the butter and then combine melted butter with graham crumbs in a bowl until thoroughly combined.
3. Press mixture into an even layer on bottom of 9 x 13 baking dish.
4. Top crust with chocolate chips, then pecans, then coconut, and then drizzle with sweetened condensed milk.
5. Bake in oven for about 30 minutes (or until coconut is a beautiful golden toasted brown). Remove from oven and let cool completely. To cut easily, let sit in refrigerator for 1 hour, and then cut and serve. (Best served chilled!)

Groceries.

Life has been BUSY you guys! Jarryd and I both work full-time jobs with pretty similar hours. After work he's got his soccer-coaching gig and I've got my cake-decorating gig. It's a GOOD kind of busy because we're busy doing the things we love! It's pretty sweet how we've both learned so much about each others' passions in the short time we've been married. Jarryd didn't know how much work actually went into baking and decorating cakes and cupcakes, and I certainly didn't know how much thought and strategy went into being a soccer coach. I've never heard so much about 4-3-3 and 4-3-2 and 2-3-1 and 9-0-2-1-0 formations in my life! {HA, I totally made that last one up.} ;)

Whenever Jarryd and I have a spare moment together it's usually spent eating our supper in front of the tv and enjoying some Gilmore Girls, and then occasionally pausing it to talk about how our days went. We just can't get enough!! Besides bedtime, that is absolutely our favourite time of the day! <3

I can just feel that Fall is right around the corner because I'm gettin' that undeniable craving to listen to all of Taylor Swifts' albums, new and old. It can't be stopped, you guys! The second reason that I know fall is around the corner is because the grocery store FINALLY released Pumpkin Spice coffee creamer. Apparently I missed the memo because the first time I checked, all they had left was the Sugar-Free version {blech!}. But the second time, they were fully stocked with extra-sugary Pumpkin Spice creamer. Mmm... I'm drinking it as I type actually.

It's actually a good thing I bought that creamer because it saves me money in the long run. For example, the thought of dropping by Starbucks on my commute home from work lingered in my mind UNTIL I remembered I had Pumpkin Spice creamer waiting for me at home. Why buy the milk when you already have the cow at home, right? {HA! Did I butcher that "saying" or what?!}

But then I'm seriously conflicted inside because the Starbucks PSL won't be around forever, so why wouldn't I just get it while I can, right?! Sigh...

Speaking of the grocery store, I am there ALL THE TIME. For real! It's because every time I get a cake order there's always some type of ingredient that I need to stock up on. Well, yes that's true, but it's not the whole truth. Whenever we run out of chips I head to grocery store. Yes, chips are the only reason I need to go grocery shopping. {Lately I've been really into Doritos Spicy Sweet Chili--but you didn't actually need to know that...unless you feel the need to send me some in the mail?! Yes?!}

Also, seeing as I am person of routine, I really wish I had ONE grocery store to shop at. You know? Like one that has every single item that you need, all at a great price. But I don't! I actually jump around four different grocery stores. Not in ONE trip, silly. In one trip I'll jump to a maximum of two stores. I alternate depending on what I need.
1) Aldi: They have spectacular prices that just can't be beat! Also, they have the cart system where you need a quarter in order to take a cart out, and then when you put your cart back in, you get your quarter back. {I like this because it reminds me of the grocery stores back home in Canada!} Despite all these great things, they don't have much selection, a.k.a they don't have the chips I like.
2) Safeway: I really like Safeway because it's nicest looking grocery store around and they have a fantastic produce selection. It's where I like to buy mangos and apples. ;) They also have a Starbucks right at the entrance....so yeahhhh. {need I say more?!} There's nothing better than grocery shopping with a PSL, right?! Anyway, I was going here pretty frequently until I read in the news about someone getting assaulted right outside in the parking lot!! I'm kind of hesitant to go grocery shopping there now, especially since I usually go alone! :S
3) Food Lion: They're the closest grocery store to us, so when we're in a pinch we go here. But it's definitely nothing special...like I honestly have nothing to say about it right now...
4) Wal-Mart. I know, I know, how could I?! Bring on the haters. Trust me, I don't like Wal-Mart either. BUT they're the only store near me that sells cake decorating products at a pretty dang good price. {They also sell the Pioneer Woman kitchen brand, which makes it feel a little more "Targety" inside} But let me tell you, Wal-Mart in this area is super sketchy, like incredibly janky. I purposely dress down when I go just so I don't stand out too much. And then there's Wal-Mart in Canada, it's just absolutely gorgeous. {I take that back, "gorgeous" is a strong word...}. It's more decent and clean-looking I should say. Also, people get shot at this Wal-Mart here, and yet I still go. It must be the cake-decorating motivation inside of me that just can't be bothered, you know?

Since we're still on the topic of grocery stores, I'm actually a huge fan of the whole "self-checkout" ordeal. I love avoiding any possible chance of awkward small-talk with cashiers. Seriously, I never know what to say when after asking a cashier how they're doing and they reply with in the most depressing tone "oh you know, hangin' in there" or "as good as I can be for being here" or "it's Monday, so enough said". Like, what am I supposed to say? "Thank you for making me feel guilty for asking you about your well-being..."?
Oh well, I feel I'm allowed to comment on cashier-etiquette only because I used to be one. Good times!

Pastel Purple Flower Cupcakes.

Hi friends!! At the beginning of August I was asked by a dear friend of mine to bake cupcakes for her upcoming baby shower. I felt incredibly honoured and flattered by her request! I was also super excited to get things rolling because she asked if I could do my signature buttercream flowers on the cupcakes. {Click here to see my past work!} YAY! Piping buttercream flowers is my favourite thing to do in the world of baking. I find it very therapeutic, fun, and at the same time informative because I learn something new every time I pipe out another petal or flower; I learn what I like, dislike, if my buttercream is too thin, thick, cold, or warm, and if I'm applying too much pressure or too little pressure with the piping bag. If I'm not writing these things down I'm attempting to take mental notes. {I need to get better at taking notes while baking because I'm always telling myself that I'll easily remember every little step that I did...pfft! Nope, not the case!}

I was asked to do 4 dozen cupcakes. {48 cupcakes!!} 24 chocolate, and 24 vanilla. This was the biggest cake/cupcake order I've had yet, so I was super excited!! Learning from past experiences and mistakes, I baked half of the cupcakes {12 chocolate and 12 vanilla} the week before the baby shower, froze them {with my careful and tedious-for-good-reason cupcake freezing method} and then baked the other 24 cupcakes on the evening before the baby shower. I think some people look down upon freezing baked goods, because they're not considered "fresh" to them, but alot if not most cake decorators have freezers full of frozen cake layers/cupcakes because it saves them time on the day of decorating. But more than that, freezing cakes actually makes your cake moister. Seriously. {And if you're curious about how to properly freeze cakes, I'd love to share with you a tried and true way!}
I could have easily baked all 48 cupcakes at once, but one of the recipes I love I had only done for cakes so I needed to experiment how they held up in cupcake form and how many cupcakes it could yield. THANKFULLY they turned out perfectly because that recipe is my all-time favourite and I wanted to use it so bad for this order!

ALSO, baking some ahead of time helped me figure out what to price the cupcakes at. <---This part is always fun...not! But I must say, since I started pricing baked goods back in the beginning of the year, I have gotten much better at it! Compared to the time it used to take me to price cakes out, this order took no time at all! You guys, the fact that I've improved and progressed in this area makes me SO happy; I feel so encouraged because pricing and cost is a crucial part to the "business" of baking and I feel like I'm on my way!! :) Thank you, Lord!  <3

The evening before the baby shower {Friday} I finished baking all 48 cupcakes {truthfully, I baked a few extra in case some didn't bake properly, and I'm glad I did because there were a few cupcake liners that I didn't fill with enough batter. Oops!}

After experiencing hallucinations and nightmares all night involving some sort of cupcake catastrophe or distaster, on Saturday morning I woke up to my alarm at 7 am. Thank goodness because I had a nightmare that I woke up at 12 pm, leaving me less than 2 hours to whip up the buttercream frosting and pipe 48 floral buttercream cupcakes. Talk about a stressful sleep!! Anyone else experience dreams like this before a big event?!

In all honesty, I spent an extended amount of time on this buttercream frosting; like, much more time than most people would. I just wanted it to be absolutely perfect; not too sweet {especially this!!}, not too soft, not too firm, not too salty {I love salt soooo....it's important for me to remember that not everyone loves salt as much as I do!}. I'm kind of particular in this way...I have a buttercream recipe that I go off of, but after I adding all of the measured ingredients that are listed I just go with the flow, adding a little more vanilla here and there, another teaspoon of salt, another 6 cups of icing sugar, ect. :P And best of all, it's ALL pure, amazing, delicious, melt-in-your-mouth butter. No filmy-feeling-on-the-tongue shortening.
But most of all, I wanted this frosting to be theeeee most perfect pastel purple ever!!

As I briefly mentioned in a previous blog post, I used my 6 QT Professional Series KitchenAid mixer for the buttercream and it was AMAZING. {I should really be getting paid by KitchenAid for saying this...} I've only had my stand mixer for a few months now, so I'm new to the working wonders of the glorious KitchenAid mixer and I must say it's practically life changing. It's like when you have a baby. All is well before your baby comes into the world, and you can't even imagine life WITH a baby in it. Now, after having a baby, you can't even remember your life "before-baby" and can't imagine life "without-baby". Ergo, I can't even imagine my life "without-my-pastel-pink-KitchenAid-stand-mixer". {bahah, how terrible was that comparison?! I thought it was fitting with the whole baby shower theme...be nice to me in your comments below... :P }

ANYWAY...This particular cupcake endeavour was my most organized and successful one yet, take this photo for example:

I have a clean kitchen {culinary school's classic: clean-as-you-go system}, all of the cupcakes are laid out in their fancy "boxes", and everything is set up in "assembly line" fashion; buttercream frosting, piping tips and couplers, disposable piping bags, cupcake wrappers, and glitter {which I never ended up using}.
I even had it all planned out of what piped flower designs I would do and exactly how many of each design as well. {I've progressed immensely!}
This is just beautiful. When I see cupcakes like this I see delicious blank slates, ready for anything. I get so so soooo excited and nervous {the good kind of nervous!} during this stage of baking because it's my favourite part and also the most crucial part. I just love piping flowers and applying all of the finishing touches!
 My first four cupcakes in the rose design, none of which I had to redo! I got it all perfect on the first try!! Ugh, what a good day.
A few hours later, DONE. 48 cupcakes DONE! I get asked how long it takes me to do each cupcake and honestly, it can go from a few seconds to a few minutes. The rose swirls for example take literally seconds, whereas the tiny-petaled-chrysanthemum designs take minutes because of the tediousness. {But the intricacy of the eye-appeal is totally worth it!}
Due to the annoyingly horrible indoor lighting our kitchen has to offer, the colour of the cupcakes you see in this photo is not true. In fact, they definitely look more pink here than they do purple. That is why whenever I am colouring my buttercream frosting I'm always dipping my spatula in the frosting and then walking over to our living room window and holding the spatula up against the white wall so that I can see the true colour of the frosting I've produced. I think I did this 10 + times trying to achieve the perfect pastel purple {and it SURE paid off}!
I bought these BEAUTIFUL laser-cut lace cupcake wrappers off of Amazon and I wasn't completely sure if I'd even use them, just because I'd never used cupcake wrappers before. But the moment I placed the first cupcake in one of those lacy-white beauties I fell in LOVE.
The cupcake wrappers made these cupcakes go from "pretty cute" to "GORGEOUS"! They add a whole different dimension to the cupcakes because they hide those wrinkly transparent cupcake liners.
AND OF COURSE, anyone who knows me at all know that I need to photograph all of my beauties!! :D Note the colour difference from the photos taken in my kitchen to the photos taken beside the window! If there's any advice I can give to foodie photographers, please take photos of your food in natural light--you'll give so much more justice to the work you put into your creations!!
Unfortunately I didn't have alot of time for a photoshoot, so setting them on this marble tray was all I could come up with.
 ^The cupcake with all of the little petals is the one that takes the longest to pipe. {Can you imagine piping 4 dozen of just that design of cupcakes?!}
 I also ordered these amazing plastic cupcake boxes off of Amazon {Amazon Prime is my best friend--what is better than free 2-day shipping?!}. These boxes are perfect because their domes have a high height and their compartments are wide enough to fit cupcakes plus their cupcake wrappers-although it was a little snug in there. I'd ask for compartments with a teeny-weeny bit more circumference if I could...
All ready for transport!! Delivering them is also a nerve-wracking part of the whole ordeal.

Now, normally I drive to the destination, open the boxes to show them to my client to make sure they're pleased, return to my car, drive home and sigh a huuuuuuge glorious sigh of cake-decorator's relief. But this time was different as I was actually attending the baby shower. Not only did I have to bake the cupcakes, but I had to be present for when people were trying them and eating them for the first time! {GAH!!} So many fears and insecurities snuck into my brain at this time such as, "what if they're actually horrible? What if nobody likes them?!" but I just have to remind myself that I KNOW what I'm doing. I've done this before! I've had friends and family taste-test all of my recipes and give me honest feedback. I've tasted this batch of cupcakes at every stage of the baking and decorating process, and most of all, I have put so much love into this it's not even funny! I don't think I've ever put so much love into a cake order yet {mostly because my love grows surprisingly deeper and deeper every time! Haha!}.

Despite driving to the wrong house and not remembering the actual address of the baby shower and having to call Jarryd at home to go look at the invite to tell me the address and then mentally freaking out because I was arriving late to the baby shower and feeling horrible because this is an important cake order and it probably looks so bad for my reputation that I'm LATE, it was all good because it was so busy inside the house with everyone standing and greeting one another that nobody even noticed I was late! * gasp * WOOOOW that was a long run-on sentence!! {Plus, I think when my "clients"/friends laid eyes on the cupcakes it distracted them from me being 10 minutes late}. Phewwwwww!

And then there's THIS!! I always say that piping the flowers on my cupcakes is my favourite part of the process, but seeing the look of approval and joy on people's faces when they see and taste my cupcakes is actually my favourite part. It's the reason I even DO all of this!!
It felt incredible to have complete strangers come up to me at this shower and ask me "was it you who made the cupcakes?", and after an enthusiastic squeaky "yes!" from me, for them to say how amazing they were, that they not only looked gorgeous but TASTED incredible and that they'd like business cards, felt so so so good!! I honestly can't even tell you how many people came up to me to compliment me because I completely lost count {haha!}. I'm pretty sure I looked like I was permanently blushing the entire time. And it's not like I went around the room approaching people with a "sooooo how'd you like the cupcakes?!" just fishing for compliments {believe it or not, there ARE personalities who do this!}. Like, total strangers approached me; total strangers along with friends and acquaintances went out of their way to talk to me about the cupcakes. They didn't have to say anything, but they did, and I'm so glad!

I've always been a person who can take criticism well. I'm very teachable and can learn from my shortcomings; therefore, I appreciate ANY kind of feedback, especially on something that I'm most passionate about!

As I said in my above Instagram post, I'm so thankful for this passion that God has instilled in me; He gives us these passions for a reason. He's given me the patience to wait for cake batter to rise in the oven. He's given me a steady hand to hold a piping bag and for piping intricate designs. He's given me a creative eye for food styling and skill with a camera. He's given me introverted mind that never tires of dreaming, imagining, and exploring new ideas! There's also things that aren't so natural to me such as planning most efficiently and working with numbers, but He's given me the determination and motivation to grow in these areas!! He is so good and I'm so excited and willing to go wherever He takes me with this whole baking thing! <3

A few days later after all of this, my friend sent me photos that she took of my cupcakes {and some with her preggo belly!!} with her fancy-schmancy camera and because I'm so in love with them I just HAD to share them on here with you guys!
