Taco Soup for the Soul and Sinuses.

A week (or so) before this past Christmas, I got sick with a horrible cough. A few days into my sickness, Jarryd also got acquainted with this horrible cough. So for three days straight, our lives together consisted of couch, blankets, pillows, binge-watching Gilmore Girls on Netflix, kleenex (rolled up, all over the floor!), and of course bowls and bowls of taco soup.

This soup is absolutely amazing. Apart from Summa Borscht, and Olive Garden's Zuppa Toscana, this has got to be my favourite soup in the world. Not only is it crazy easy to make, it makes your life crazy easy. Prime example, I always double or even triple the recipe, so that I have easy-to-reheat leftovers for days (#fa daaaays!), or when I freeze it, I have ready-to-go meals for weeks!!
And honestly, how can you resist a bowl of soup topped with Nacho chips?!

My hubby and I highly recommend making this soup as hot & spicy as possible, to clear out your sinuses and get those nasal passages flowing! And be sure to keep a box of kleenex's within arms reach. ;)


Taco Soup Recipe - (Mennonite Girls Can Cook)

Start with a large pot!
Fry together until meat is cooked & veggies are tender:

  • 1 lb lean ground beef
  • 1 diced onion
  • 1 cup chopped celery
  • Optional: some chopped jalapeƱo!
Add to the pot:
  • 1 398 ml can of tomato sauce
  • 1 341 ml can of corn, (with liquid!)
  • 1 398 ml can of kidney beans (drained!)
  • 1/3 cup of salsa (I usually leave this out, just because I don't feel like buying a jar of salsa haha)
  • 1 tbsp chili powder
  • 3 tbsp of taco seasoning (mild OR spicy, the choice is yours!)
  • 3 cups of water
Simmer for 15 minutes!
After served in bowls, soup tastes great with a dollop of sour cream, some shredded cheese, and of course, Nacho-cheese chips!
