10 Tips to Achieving Success in the Kitchen!

We all want to waltz into our kitchens with unshakeable confidence and create something equally beautiful as it is delicious, right? A perfect afternoon spent in the kitchen with no hours wasted, pans burnt, or ingredients spilt is for sure the ideal scenario in our heads; but take it from me, things never go 100% according to plan. Even after five years immersed in the culinary industry and having picked up SO much food knowledge (plus all those episodes of Masterchef on TV 😜), I am still more than capable of screwing up a recipe that I've made dozens of times before. Sigh, I'll never understand it.
And although expecting a perfect outcome every single time is quite the unfeasible goal, we can still do everything in our power to get as close to smooth-sailing as humanly possible. We can!
Those of you who are well seasoned in cooking, baking, and all things culinary, these tips may be considered common sense to you. To be honest, I have assumed that these are as well known to everyone else as they are to me. But this totally isn't the case! If there's one thing I've learned over my 26 years of life it's that just because I may know a certain skill, it doesn't mean that my friend, husband, co-worker, or Mom know it too. The best written work comes from people who write about what they know, so imagine if we all wrote about our knowledge and personal experiences--we'd learn so much from each other!
So here we go, these are my 10 best personal tips for achieving a successful cooking and baking endeavour!

1. Read Over Your Recipe Carefully.

When going off of a recipe--before you even start preheating your oven--read the entire thing from beginning to end. Skip over nothing so you miss nothing! You do NOT want to end up with a bunch of surprises half way through. Also, ask yourself the following two questions to avoid any other surprises:
Do I have the necessary equipment to execute this recipe? Wait, I need a muffin tin to bake these muffins?! 😂 Or: I need a whisk attachment to make this meringue?! Oops.
Do I have enough time to do this recipe? You don't want to promise your friends at that party in two hours that you're gonna bring a pan of homemade cinnamon rolls if you haven't even started prepping it and only now just realized that it takes over an hour to proof the dough. I hate to be the bearer of bad news, but you're gonna be sooo late to that party, unless you're a cheater and opt for the grocery store cinnamon rolls instead.

Remember, some recipes don't have to be executed at one time. For instance, when I bake pies I always make my pie dough the night before, which means I only have to focus on my rolling, filling and assembling the following day. When I bake cakes or cupcakes, I bake my cakes/cupcakes the day before and fill/frost them the next day. It's so much more enjoyable when all you have left to focus on is the piping and finishing touches (also known as, the fun part)!

2. Check Your Ingredient Supply.

This is a huge one for me. Whenever I'm about to bake something, I'll put the recipe on the kitchen counter and read through each ingredient listed one by one, scanning my pantry shelves, cupboards, and fridge to see if I have those ingredients. If I don't, I write down the ingredient AND its quantity on a piece of paper or on the Notes app on my phone. (Writing down the quantity is important too because in the past I've written down that I needed confectioners sugar, only to realize later that I only bought half the amount that I needed.) Even though I only live literally a minute drive from the nearest grocery store (which I'm SO grateful for), there is nothing worse than starting to work through a recipe after already making a grocery-trip only to realize I forgot to buy an ingredient or that I didn't buy enough of it.
This means I have to put my shoes back on, grab my purse, run down the stairs, get into my car, drive to the grocery store, find a place to park, speed walk all the way to the back of the store (why is that one ingredient always furthest from the check-out?),  make a mad dash to the checkout, wait in the longest "express" line ever because you just remembered that it's Saturday and EVERYONE decided to come here too, run back to my car, get stopped at that annoying red light on the way back to my apartment, park my car, run up the steps, and then continue on baking feeling all out of sorts all because I forgot that ONE ingredient. Friends, I beg of you--learn from my mistakes and carefully check your ingredient count.

3. Begin With A Clean Kitchen.

There's nothing more satisfying than beginning your baking adventure in a sparkling clean kitchen! Now, how does that saying go again? A clean workspace is a happy workspace? Well, it's totally true. Not only is it way more sanitary for the food you're about to eat, clean countertops provide a sense of organization and motivation. I know that if I'm in any room in general that's super messy I can't think straight and grasping for a sense of focus is ill-fated. Also, when my counters are already spotless, it makes me more inclined to keep them in that condition which brings me to my next point...
4. Clean-As-You-Go.
The first time I had ever learned this concept was during my time in culinary school. We'd actually lose grades for having a messy workstation. Why, you ask? Go work in any commercial kitchen--your executive chef will lose it on you if you're cooking in a mess. A messy kitchen is unsanitary, and it decreases surface area (there is NO kitchen with more-than-enough counter space to begin with). But worst of all, it's a horrible feeling to turn around after putting your cake in the oven only to discover that a tornado has obnoxiously made its way through your kitchen. When did this happen?! The sight of all those dirty dishes and buttercream-smeared counters is overwhelming and if anything it makes you just wanna crawl up on the couch and call it a day. The concept "clean as you go" can be executed like this: I just used this knife to slice a lemon into wedges, so I'm going to immediately go to the sink, wash it, and lay it on the drying towel next to the sink.
I like to keep a big bowl of hot soapy water in my sink so that I can toss dirty utensils in there and let them soak/disinfect as I continue on cooking/baking. Keeping dirty dishes and utensils soaking in water keeps the food from hardening onto it thus, making it a breeze to clean!

5. Mise En Place Your Ingredients.

This fun and fancy french word means to "put in place"; it's a concept that I also learned in culinary school/every cooking show that's ever been on TV. It means to read through the recipe, measure and prep each ingredient, and put them all into individual containers or bowls. (Dollar Tree/Dollarama sell these little packs of bowls for cheap! Personally I love their little glass ones.) When you take the time to carefully measure out each ingredient before mixing anything together, it's rare that you'll make a mistake such as neglecting an ingredient or mistakenly adding an ingredient twice because you forgot you already added it!
I'll be honest with you, I don't always practice "mise en place". Even though it's so helpful, sometimes my laziness takes over. Since I try to hand wash everything I bake with, the more bowls I use for mise en place, means the more bowls I have to clean. And seriously, can't we all just agree that washing dishes is THEE WORST part about baking?!

Although I don't practice mise en place as much as I should, I am however really good at putting ingredients away right after I use them. My personal more frequently used version of "mise en place" starts with me putting every ingredient that I need onto the counter. As soon as I'm done measuring and adding an ingredient to the mixing bowl such as chocolate chips, I immediately wrap up the bag tightly and put it back in the cupboard. As soon as I've scooped and measured my little teaspoon of baking soda, I put the container back in the cupboard. This gives me visual affirmation that I've already used this ingredient, and no longer need it (in case something distracts me and I forgot). Out of sight, out of mind!
6. Take Notes.
A super helpful thing to do is to print out a recipe, and as you're working through it take notes on literally everything. This will seriously help you when you find yourself making this recipe again in a few months and have already forgotten how many extra tsp's of lemon juice you added last time to make the perfect lemon cake.
I'm just going to be blatantly honest here, I am horrible at taking notes while baking and cooking. I just want to get things done as quick as possible and feel like taking notes will slow me down; once again my laziness gets the best of me. BUT, this is something I am seriously striving to get better at. I even bought a bunch of sheet protector sleeves and a binder to keep my recipes in, safe and secure. So unfortunately no, I have not taken notes for every single recipe I've conquered, but I have for some and here's an example of them:
1 tsp vanilla 2 tsp vanilla.
The batter is very thin--this is normal.
Cupcake tins need to be filled up to the top.
A medium cookie scoop made 24 cookies, a small cookie scoop made 36.
This recipe yields 24 cupcakes, when doubled this recipe yields 3 8" round cakes.
2 lemons = 6 TB lemon juice and 3 TB lemon zest.

7. Stay hydrated/energized.
I can't even tell you how many times I've started a baking endeavour on an empty stomach. It's not really a huge deal if you're making something quick and simple like chocolate chip cookies (although it may entice you to eat most of the cookie dough 😏 ). But if you're tackling a layered cake project that takes a few hours, you can begin to feel fatigued and a little fuzzy-headed partway through. I don't know about you but fatigue and impatience go hand-in-hand for me and one does not want to lose patience over decorating a cake! The last time Jarryd witnessed me beginning to get frustrated whilst cake decorating he wasn't havin' any of it! He sat me down on the couch, made me some food, handed me a glass of water and made me sit for 30 minutes. I felt a zillion times better after that half hour breather was over; I couldn't believe that a little rest and replenishment was all I needed to bring myself some clarity.
Speaking of hydration, water is always a good choice, in general. I learned the hard way that drinking a Coke while trying to perfect my buttercream recipe was a bad idea because my palette was totally inaccurate from all the Coke sugars.
8. Put some tunes on!
This one's totally optional, of course. I mean, I don't think there's scientific evidence to back me up on the idea that music will lead to better tasting baked goods (wouldn't that be nice?). But, what I do know is that listening to music while working on a daunting task can make you feel a little more "loosey goosey" as they say. If I happen to be home alone, I'll turn our TV on to one of those music stations and turn up that country music reeeeeal loud. (If my husband is home, I'm usually baking to the sounds of UEFA commentators or Jarryd shouting joyous praises because Ronaldo just scored.) Other times, if I'm working on a brand new recipe that's quite tedious and complex, I don't want ANY sounds going on around me because undivided concentration is key. Because let's be honest, when your favourite song starts playing your whisk somehow transforms into a microphone and your kitchen is your stage. But I will say that playing music during the clean-up part is a fantastic idea. It helps to take your mind off of those annoying buttercream-clogged piping tips you've been trying clean.

9. Gather Up Inspiration & Look For Help.
If you're feeling stuck on what baking/cooking project you should tackle next, I go to the world-wide-web for inspiration. (I'm not a big cookbook person, I only own like 5 of them and truthfully they're gathering dust as we speak.) On Pinterest I type in "baking" or "desserts" and when a specific dessert catches my eye, I might use their recipe, but most of the time I turn to Google Search or AllRecipes to find a perfect recipe for it. (I LOVE AllRecipes--seriously, you can't go wrong with a recipe that's been given 4 or 5 stars with thousands of reviews!)
If you want to learn a new skill like how to lattice a pie, or how to make a sugar tuile, or how to perfectly boil water for instance: Youtube. After I finally purchased a huge set of piping tips and my cake turntable a few years back, I immediately went to Youtube and searched "buttercream roses" and that is where I learned how to pipe my very first buttercream flowers! Because I'm a visual learner, reading step-by-step instructions about what angle the piping tip should be at or the amount of pressure you need to give with your hand does nothing for me. Youtube tutorials however, do everything for me! Watching someone pipe a flower while explaining in detail their every move taught me tremendously and gave me a whole new skill in just one afternoon!

10. Nominate Some Taste-Testers.
When I was doing my first wedding cake back in April, I tested a cake, filling, and frosting recipe two or three times because I HAD to get it perfect. My number one most reliable, and HONEST taste-tester is Jarryd. He will never tell me something is good when it's not. And bonus, he has a killer palette (much more accurate than mine). My next go-to's are my in-laws because they too will give me honest feedback. You need people like that in your life because there are some folks who will just tell you what you want to hear or tell you something is perfect even when it's too sweet or too salty.
Nominating taste-testers is a win-win because your friends and family get to indulge in delicious (free!) desserts and in return you get honest critique!

So there you have it guys, my 10 best tips to achieving success in the kitchen! Do any of you guys practice these tips too? Did you learn anything new? Is there anything you know that would help you tremendously but neglect to do it anyway (like me and my mise en place and note-taking 😬)?!
But most importantly, do you have any tips of your own to add or things that work for you? I would LOVE to hear them because I'm always looking for ways to better myself in this area! Thank you guys so much for reading and I'm so thankful we can help one another out. Happy baking, friends! 💖

Why I Love Being Married.

This has been an immensely busy season for Jarryd and I. Both of us have so many different things going on, making life not so easy breezy these days. On my drive home from one of my many obligations, this time of busyness got me thinkin'...I knew that Jarryd was already home from work and that he would be there awaiting my arrival. Just the thought of having someone to welcome me home when I step foot into our apartment after such a crazy day lead me to this conclusion: I'm so thankful I don't have to do this alone!

Marriage is fantastic--tough at times, but incredibly rewarding. The best things in life come with commitment and hard work, no? So in no particular order, I decided to write a list of my favourite things about marriage:

1. You have someone you can be your total self around and have the comforting knowledge that they'll love you unconditionally. I know for me, I am NOT my total self with most people. I'm pretty sure that if I were, they'd never want to hang out with me again. I'm not referring to the flowery "Be Yourself" or "Love Yourself" because you're such a unique and special snowflake. I'm talkin' about the crankiness, the cynicism, the breakdowns, the venting, the neglected hygiene (showers are such a hassle, y'all), the ugly sobbing, and the complaining. My husband--(and maaaaybe my siblings) are the only people on earth who will ever see that fallen and humanly side of me. And guess what? I know they'll always love me and I'll always love them!

2. You always have someone to watch TV with. Some of my favourite evenings consist of coming home from work, ordering our favourite take-out (either pizza, Chinese, or McDonalds--these details are important), and literally doing nothing but talking, laughing, and watching a great show together. (Until I fall asleep, that is--for some reason I am ALWAYS the first to doze off on the couch...I never used to be this way, guys. I'm getting old!) Right now our current TV show of choice is Friends...once again.
Side note: we are constantly pointing at each other during this show saying "that's SO you", and we've come to the conclusion that Jarryd is 1 part Chandler and 1 part Joey (not Ross, thank goodness!). And I am a solid mix of the three girls Rachel, Phoebe, and Monica; I have Rachel's emotions, Phoebes sweetness/quirkiness/flightiness, and Monica's cynicism.
Moving on.

Fun Facts About Me!

Hey!! It's that time again, the time when I share with you some random, weird, funny, absurd, and quirky facts about me that make me who I am. I've done this a couple times before, so forgive me if I have shared the same facts twice over the years.

1. This isn't a very fun fact actually, but I'm gonna share it anyway. At my last trip to the eye doctor, I found out I had: Pinguecula. (A fun word to say, right?!) It's a raised yellow bump(s) on the whites of my eyes. They're caused from too much sun exposure--so apparently I went on one too many cruises and Florida vacations without wearing any sunglasses. It's super annoying because it actually stings and then the rest of my eye-whites get inflamed and therefore turn red. Yes, my eyes are always red and I hate it. Of course, I should count my blessings because there are worse health-issues that I could be stuck with, but it doesn't change the fact that this stinks. My eyes always feel so dry, as if my eyes haven't "slept" in days. So those of you who have beautiful white eye-whites, FEEL SPECIAL and know that I am jealous of you.

2. One of my greatest pet peeves is when people use the same word in a sentence twice. For example, "I'm feeling so many feelings". Gahhh. I'm cringing just typing that. Or "this stressful situation is causing me so much stress". Just please stop. 😫

3. High-strung, intense, fast-paced people bother me. Why are you expending SO much energy on such minuscule tasks?! Just take a breath and slow down before your inevitable-future-heart-attack catches up to you.

What I'm Thinkin' Is...

Blog posts where I write down all of my current most random thoughts are my favourite kind of blog posts! I find them to the be the most down-to-earth and at the same time so real and organic that it's on the verge of being almost too boring to read. Right? :P

I mean, do people actually care about my random thoughts? Speaking of, I just posted a photo to dear ole' Instagram holding my disposable Starbucks cup in front of my new world map from Ikea, casually stating how I like to take my Caramel Macchiatos. See below:
WHO cares?! Not gonna lie, the Instagram culture makes me laugh. People claim to be real and authentic, yet it takes them ridiculously long to shoot the perfect photo of a #flatlay scheme, ridiculously long to edit the photo, and ridiculously long to decide on the "perfect" caption. And the hashtags are a whole 'nother story; they are cheesy beyond belief. Take #myunicornlife for example. Does anyone actually have a so-called "unicorn life"? What is this "unicorn life" they speak of? And then there's #theeverydaygirl, what is an "everyday girl"?!

I think the funniest thing about it though, is that I AM ONE OF THEM. I am guilty of doing all of the above, especially the part about the "unicorn life" hashtag. Yep. But hey, at least I can admit that I'm crazy when social media's involved, and most importantly I can do all of this, all the while admit that I don't take myself too seriously.

Honestly, it's kinda fun having a little space on the internet where I can portray the best of my best; my best days, my best moments, my best home decor, and my best baked goods {all in the best natural lighting of course}. ;) Plus, Instagram is a creative's dream social media outlet; where artistic personalities are admired and celebrated!

Anyway, I intended for that to be the introduction to my list of random thoughts, but it seems that I went off on a bit of a tangent and thus it appears I already provided a random thought. So let's continue, shall we?

One of the best feelings in the world is when you get a brand new album and you listen to each song once, already picking and choosing what your favourites are just from the first listening session. And slowly but surely the song you didn't like at first eventually becomes your new favourite! I also love the feeling when I'm at work and think to myself, "I can't wait for my 25 minute drive home because that means I get to listen to ______ on repeat!!"

But that brings me to my next point...one of the worst feelings in the world is when you've listened to your new favourite album one too many times and you're left with absolutely nothing worth listening to and all you have to turn to is FM radio. *tear*

One of the most---I'll go with---interesting things about the American culture, at least in this part of America, is that acquaintances/practically strangers will tell you all about their day without even being asked to. I rarely have to ask anyone anymore about their day because they don't even give me a chance to. I guess it's just frustrating because where I'm from in Canada, the normal social etiquette is quite different, take this for example:
Person: "Hello!"
Me: "Hi! How are you? What is new?!"
Person: "I am good! We just did ____ and ____! How about you??"
Me: "Well, I am ____ but____ happened and now_____."
Person: " Oh wow that's interesting! _____"
And the conversation just flows nicely because both parties have had a chance to express how they're doing. Doesn't that just sound oh-so lovely?!

However, the American culture {in the area I live, and especially in the area I work--and I understand it's different from State to State} goes somewhat like this {PLEASE NOTE: Of course, not every single person is like this, it's just the majority}:
Person: "Hi how are ya?!"
Me: "Hello, I'm goo--"
Person: "OH MAN, last night I went to _____"

Or....
Person: "Hi Jenny. So I have ____ and ____ going on and ____ and _____ ....blah blah blah".
The end.
Let's just say I've learned the annoyingly hard way that "how are you" is not actually a question it's just a part of how they say hello. Sigh.
Anyway, I need to move on before I start embracing that cranky feeling...

Food-wise, this last weekend was tough because Jarryd and I skipped our weekly grocery shopping trip. Therefore, we had NO chips in our pantry. Having a chip-less apartment takes tv-watching 5 notches down on the fun-scale. But fear not, yesterday I finally went grocery shopping and bought 3 bags. :D

In lieu of "Gilmore Girls: A Year in the Life" coming out this year, {eeeeee!!!} we have started up Gilmore Girls all over again. This may be my 4th or 5th time watching the seasons back-to-back. Don't judge me. For some reason, Jarryd and I are watching 3 tv shows at once, "Gilmore Girls", "The Office", "Chrisley Knows Best", and "Pretty Little Liars". Again, don't judge me. Some may see tv-watching as a waste of time, but I see it as a bonding/social activity. Jarryd and I are always hitting the pause button so we can express our opinions to each other about what just happened on the screen.

See the shirt I'm wearing in the above photo? Yeah, I bought that at Plato's Closet back in June. It's now practically September and I FINALLY had the guts to wear it in public last weekend. Isn't that hilarious? It has holes in the shoulder which make it just so....so...adventurous and bold. And now that I've worn it in, I think I'll keep wearing it. Although it was slightly uncomfortable as I kept thinking that my straps were falling down because my shoulders felt "airy".

If you're ever in our apartment's kitchen and you see chunks of buttercream frosting on the walls, and icing sugar on the bottom cupboards, that's normal. This week's buttercream-wall-decor is a nice light purple. I'm contemplating just leaving it there...

Whenever new people I meet ask me what kind of music I like to listen to, other than immediately blurting out "Taylor Swift", I never know what to say. I like For King & Country, but I also like The 1975. I like Lauren Daigle, but I also like Selena Gomez, Hilary Duff, and Ariana Grande. I like Bethel, but I also like Alessia Cara, Sara Bareilles, and Ellie Goulding. Should I just say that with the exception of the first two bands, that I like to listen to female singers? Sounds good. Glad we got that figured out.

So remember how in a previous blog post I said I'd be reading Sisterhood of the Traveling Pants all summer? Well, I haven't picked the book up since I wrote that blog post and summer is almost over! I am the WORST reader ever!! Perhaps if it were a TV show instead then I'd get through it quicker...

This morning I was an hour late to work because...I totally did not set an alarm last night. Isn't that crazy?! How does one forget to set their alarm? All I remember waking up in the morning thinking to myself, "wow, for some reason this has felt like a nice long sleep tonight..." {Little did I know...} :P

I miss Canada...alot...and I think it misses me too.

This last weekend I went to a friend's baby shower, and it was insanely creatively planned. FOR EXAMPLE: When you went to the drink table, you were supposed to put an ice-cube-baby in your drink cup and when your ice cube completely melted you were supposed to shout "my water broke!"
Like, there is a tiny plastic baby in my cup...isn't this the FUNNIEST thing ever?! Granted, having moved to the US I have missed thousands of my friends' and family's baby showers back home, this whole ice-cube-baby thing could be totally routine by now. But hey, it got a huge laugh outta me!

Jarryd just starting coaching high school boys' soccer and I couldn't be prouder!! He's totally in his element with this; isn't it so cool seeing your spouse doing what they love?! {Now, I haven't seen him coach yet, but I absolutely plan on it! I can't wait!} But for now, I'm loving the glorious alone-time that I get while he's at practice. :) Hee hee!

Back to Gilmore Girls, I have this thing, whenever Lorelai cries, I cry. The other night Jarryd looks over at me, "are you really crying right now? Really?", and I reply with "wha? huh? um...no...OK FINE I'm crying. Ugh, it's not my fault that Lauren Graham just has the most contagious cry in the history of female actors".

Last weekend I made buttercream frosting and I poured 3 whole 2 lb-bags of Confectioners Sugar into my mixer. That's 6 lbs, people! Which is also over 18 cups of sugar. {And I'm not even going to tell you how much butter I cut into that thing!} I have never loved my 6-QT Bowl-Lift Professional 600 Series Pink KitchenAid Stand Mixer as much as I did then. I wanted to plant a kiss on its' beautiful motor but I concluded that that would've been unsanitary. Here's a photo of my 28 lb beauty so we'll never forget... <3
I think I write this in every single one of my "random thoughts" blog posts, but hey it still rings true: I hate showering. Ughhh. Like, I need a shower right now quite badly and it's going to take every ounce of my strength to get into that damp, white prison. I'd rather write a long list of things I could be doing INSTEAD of washing my hair. Ah well, I'm still thankful for running water, don't worry.... :'(

Well, I think that's enough random thoughts for one blog post, eh? Until next time, my sweet friends! :)

Why am I a Cook?

As most of you probably know, I LOVE learning about personalities and doing personality assessments is one of my favourite activities. {Myers-Briggs is the best!} I have this habit of when meeting someone new, I read them and fit them into little personality boxes with labels such as thinker/doer/logical/passionate/emotional/risk-taker/shy/outgoing for example. And because everyone knows that first impressions are never reliable when it comes to making judgements about someone, this person will do something out of that little personality box I made for them and completely surprise me. And then I'm all out of sorts and have to figure out a new box for them. It's as if I'm just asking to be surprised. {It makes me wonder if I ever surprise anyone about my personality...}

And it's rare that I'll meet someone and think "wow, what an awful personality"; 99% of the time I think to myself "wow, I love their personality--I sure hope it rubs off on me because I really admire ______ about them".

^ Oh man, does anybody else do this?! And why do I do this to myself, you ask? I have no idea. It keeps my mind entertained that's for sure. I just find people and their little quirks so interesting.

I read somewhere that one of the worst jobs for an INFJ personality such as myself, is being a cook. AND THAT IS EXACTLY WHAT I DO FOR 40 HOURS A WEEK. How does this even make sense?

I think when it said "cook" it was most likely implying culinary jobs such as "line cook" or "sous chef"--something extremely high-pressure. I work neither of those jobs. My position at work is more along the lines of "assistant to the chef/prep cook". My top priority at work is prepping ingredients for the fruit and salad bar (which means alot of chopping--which I LOVE!}.

BUT, just because my position isn't extremely-pressurized doesn't mean I'm free of that. In fact, I am surrounded by co-workers whose positions are that way. I am surrounded by high stress.
And anybody who knows INFJ's we loathe pressure, stress, negativity, feeling rushed, loud distracting environments, chaos, and too much social interaction. These are all of the things I experience at work--this is exactly what goes on in a commercial kitchen.

In regards to other people surprising me about their personalities, in this area of my life, I completely and totally surprise myself! Seriously! I often wonder if my friends or family can even picture me being a cook because I don't fit the personality type of a cook. {I'm not one to swear like a sailor, you know?}

I also wonder how I've survived this long in the culinary industry. It's been over 3 years of food-service jobs for me and that's actually a long time. In all honesty, I don't dread going to work. I truly enjoy my job and what I do. Absolutely, there are things about my job that I wish I could change; but the positives outweigh the negatives by far.

Positives About My Job:
Routine full-time hours
Routine tasks of working with my hands and still room for creativity
Small team of co-workers (6 of us in total)
A great boss!
Benefits/Vacation Pay/Sick pay ect.
Constantly learning new things/picking up new skills
Eating delicious food and trying new foods
I get to wear a white chef jacket. Woo!

Negatives About My Job:
Loud environment so it's hard to carry meaningful conversations
On my feet the entire time/actually quite physically demanding on the feet and legs {this is the worrrrsssst!}
At times stressful/chaotic/negative
Lack of privacy and socially draining
Waking up at 5 AM {actually this one is the worst!}

I still think it's interesting how I ended up being a cook. Sometimes at work when I am tired of standing and socially drained I find myself day dreaming about what it'd be like hidden from the world in a little cubicle, sitting in a comfy office chair, typing random numbers with my keyboard, with cheesy family photos pinned up all around me, a hot coffee next to my own computer, and my hair and makeup all done wearing a pencil skirt and high heels, and easy access to myself cell phone all day long. Sometimes I think I may have been better suited for a data-entry type job...

Oh well. Often our jobs and careers hold alot of weight in what we consider our identity to be. People might think "Oh she's a cook, so she must be ____, ____, and _____". Yes, I'm a cook but believe me, I'm soooo out of the norm when it comes to chef personalities. I cannot fit into a little chef box. I do not connect my identity to my career; to me they are separate. The only connection there is FOOD--I love food and working with food. Being a cook has never been my dream job and it never will. Is it so wrong for me to say that I'm really only working at my job for stable paycheck and the benefits?

Haha, it sounds wrong in a way...but I'm just there for the money. This doesn't negate the fact that this job is a HUUUUUGE blessing and that I'm incredibly thankful for it! Not at all! God is providing for Jarryd and I and He chose this job for me in this season of life at this time for His specific reasons. He Has me right where He wants me and I am quite content because I make a DAILY decision to live a life of thankfulness and gratitude which lead to contentment. :)

P.S- What is my current DREAM JOB? I would LOVE to be a foodie/baker/dessert blogger. Have a baking business, take photos of my creations, and blog all about it. AT HOME. {Hermits and homebodies for the win!} I'd also like to have a cat, a very very very affectionate and loving cat. Who knows, maybe I'll get there one day. :) <3

Hello Weekend--A Recap Of My Week.

Hello blog and friends! I've missed you so. I just completed my very first week--of full-time, Monday to Friday--at my new job. And wow-wee, by Friday afternoon I was T I R E D.

I have felt all sorts of disoriented since I signed onto this new job. My normal routine of using my midweek mornings and afternoons to do laundry, baking/cooking, cleaning, and BLOGGING have totally disappeared. :'(
The beauty of part-time work is that you have soooo much time to conquer to-do lists and endulge in endless hobbies. But the downside of part-time work is a substantial drop in income (of course), and in my former case, sporadic hours of work throughout the whole week (including weekends).

With this full-time job, by the time I get home at 3 pm I have to get dinner rolling. Then when the hubs gets home an hour later, the rest of the evening is history! (Can anyone tell me how weekday evenings seem to fly by so quickly? Is it because I'm continuously checking the clock, counting down the hours before I have to go to bed obnoxiously early?)
In regards to blogging/writing, I have always found it easier to do so when I am alone and my surroundings are quiet. But you know what? I think with my alone-time cut down to practically non-existent, I need to force myself to write even when I'm not in "introverted mode". Does that makes sense? :)

Today, (Saturday), we woke up to see the apartment in shambles. The natural bright light of the morning really reveals everything, doesn't it? Laundry piles all over the floor...dirty dishes all over the kitchen island...garbage can overflowing...and clutter everywhere. It's the WORST waking up to a messy home. At least to me it is. We then spent the morning getting the laundry done, picking things up, and running the dishwasher. I feel like this is the worst way to spend a Saturday morning. Blech.

I'm just excited to adjust to this new work schedule and get my weekly routine down. I have to remind myself that the apartment isn't always going to be this messy and I'm not always going to be this tired. I just haven't found my groove yet, you know? In time, in time. :)

So I'm sure y'all are dying to hear about my past week--the suspense is killing you, right?! Haha jokes. I have myself a wide open Saturday afternoon so I finally have time to write a recap of my week. Here goes!

--------------  --------------

Jarryd and I attended a conference for our church last Saturday. It was a morning filled with time to get to know the pastors/elders from the churches different campuses, spiritual gift assessments, and--my favourite activity--personality profiles! By learning these things about myself, I'm able to see where I'd best be suited to serve in the church. We did the DISC personality profiles and I was HANDS DOWN an "S", also know as "Steadiness", also known as a golden retriever. :P
^ I mean, look at that! This is totally me. The highest you can score per section is 25 and my "S" was 25. Can any of you guys relate to this??
Jarryd of course was a "D" for "Dominance". I could have done his quiz for him, and he for me. ;)

--------------  --------------

This Tuesday was the start of my very first women's "Freedom Group" meeting, and it was awesome. Not just the ladies that I met, not just the content that we dug into...but the timing of it all.
I honestly had such a bad day that day. I definitely won't get into it on my blog, but emotionally I was a wreck. I cried the whole car ride home from work, I cried during my shower, and I cried telling Jarryd about it later. I was tempted to skip the Freedom Group all together, seeing as I wasn't in the "mood" for it. But I pushed that low-life temptation aside and arrived, happy to be there!

And, it was great. It was all about Jesus. JESUS. It's like because I had forgotten about Jesus, all of my problems seemed so much bigger than they actually were.
We touched on Romans 5:8, a verse that even now I can't seem to get out of my head.

"But God demonstrates His own love for us in this: While we were still sinners, Christ died for us".

Not after we had sinned and asked for forgiveness, but WHILE we were sinning; in the midst of our sinning He loved us and died on the cross for us. While we were mocking Him and spitting on Him, He died for us!
We took that verse to an interpersonal level and asked ourselves, "is this how we react to those who are hurting us? Do we show love to them while they are hurting us? Or do we wait until they beg for our forgiveness?" Wow. Talk about a wake up call. I realized then and there that I need Jesus so badly. I need His strength to help me love those who hurt me and I need His eyes to show me the bigger picture; to see the world through not through my narrow view, but through His vast perspective.

This meeting was exactly what I needed because it renewed my mind for the week (and hopefully for the rest of my life)! I no longer felt hopeless and defeated, but I felt refreshed and joyful. I for real woke up the next morning incredibly happy! (Happy at 5 am, impossible! Not anymore!) God is so good. Because of Him, I didn't let anything negative get to me; He kept my spirits high.

--------------  --------------

As for work, overall it has been good! My first full week has been a success. I have definitely gotten the hang of things and have even stepped outside of my comfort zone. The job is not perfect, it's not my dream job, but in all honesty I prefer it to my old job. (Which is a HUGE relief!!)
The food shown above is just one of the perks of working in a cafe. I get to try new food and drinks! And when I say drinks, I mean Starbucks Frappucinos. At least once a day...sometimes even twice. Hehe!
--------------  --------------

My morning and afternoon commutes have been filled with Bethel Music's album "You Make Me Brave". Oh. my. If you don't have this album, I highly recommend it. I can't stop listening to it. It brings me so much joy. It's my daily reminder of why I'm on this earth and who I'm living for: Jesus.
The song "Forever" by Kari Jobe always moves me and brings me to tears. (It also sounds SO good cranked up in the car!)

The moon and stars they wept
The morning sun was dead
The Saviour of the world was fallen
His body on the cross
His blood poured out for us
The weight of every curse upon him

One final breath he gave
As heaven looked away
The son of God was laid in darkness
A battle in the grave
The war on death was waged
The power of hell forever broken

The ground began to shake
The stone was rolled away
His perfect love could not be overcome
Now death where is your sting?
Our resurrected King
Has rendered you defeated

Forever he is glorified
Forever he is lifted high
Forever he is risen
He is alive, He is alive!

We sing hallelujah
We sing hallelujah
We sing hallelujah

The Lamb has overcome

By the time Friday afternoon came around, I was too tired to do anything. Well, anything other than watch the first season of "Fuller House". (!!!) You guys, I was so impressed! It's JUST as funny as "Full House" was, and the little jabs at Marykate and Ashley Olsen are priceless. I am 2 episodes away from completing the whole season, and then I am going to watch it all over again. That's how much I love it!

--------------  --------------

So that was my week. To sum it all up, it was a rollercoaster of a week, filled with bad emotions, good emotions, JESUS, early bedtimes, great worship music, adjusting to the new normal, Freedom Group, sleeping in this morning, Fuller House, and the TV show Kitchen Nightmares. All I'm gonna say is that watching Gordon Ramsay throw up into a trash can was the cherry on top of an interesting week. ;)

ALSO, at the grocery store we decided to pick up a pineapple. I couldn't help but think that pineapples are one of the most beautiful and interesting fruits! Seriously! It's so unique looking. I have now decided that this is going to be my next drawing project:

Yippeee! I can't wait to get started on it! :)

Thanks for reading, everyone. I really appreciate all of the feedback and advice. :) <3

My Future Children.

With all of my friends and family pregnant or already with children, I can't help but think about the prospect of having kids myself one day. I am sure that every stage of childhood is beautiful, but from the perspective of a total outsider who has zero children right now whatsoever, I NAIVELY predict that my years with children will look something like this:

  • Pregnancy: this stage is going to be awesome. Both of my sisters had great pregnancies, so the future is looking good for me. Also, pregnant women are so beautiful {there's nothing like a pregnant woman waddle}. Not to mention. Jarryd promised he is going to pamper me so I have "living like a queen" to look forward to. Who doesn't enjoy having a palm branch waving in their face? Also, let's not forget about the baby showers! Hopefully my friends and family have good taste in onesies and sippy cups (I'd like the Starbucks one, please).
  • 0-2 first years: let's fast forward through all of this...I know it's a whole lotta eating, puking, sleeping, not sleeping, pooping, and constipation. I'll cross that bridge when I get there. You can stay at Oma and Opas for awhile. ;)
  • Ages 3-4: These are the adorable years. I've met plenty of 4 year olds in my day, and I love to see their little personalities just shine! It's ok that we sing and dance to Taylor Swift music together, right? And yes, I'm signing you up for either hockey or soccer and you're are going to look SO cute running/skating because obviously you'll be blessed with your father's athletic abilities and hopefully not mine!!
  • Kindergarten: YAY! I'm so excited to walk you down the driveway to the big yellow school bus! I know, I know, you're gonna miss me like crazy, but I'll be just fine at home {freeeeedom!}...in the peace and quiet... {Unless I have 4 kids under the age of 5...}.
  • Grade 1-4: You're in a class spelling bee?! That was my favourite activity in school! Please let me live vicariously through you. Let's practice our spelling every evening for the next 4 years of your life.
  • Grade 5-6: Let me see ALL of your homework. I love homework. I'll try not to do it all for you... :D Also, I don't care what the other mom's have to say, I'm putting Gushers in your lunch box.
  • Let's skip past all of junior high. You are extremely awkward, and so am I. Two awkwards do not make a right. I'll let your father deal with you.
  • Grade 10-11: You bet I'm going to be at all your soccer/hockey games. To my sons: You're also gonna be total "momma's boys", right? Okay? ...Please? :'(
  • Grade 12! You are so beautiful/handsome and full of secrets that I think I want to know...but in reality I really don't want to know any of them. P.S- I have your Bible college all picked out for you! Bon Voyage!
  • Age 19+, this will be my absolute favourite. I have a very good/optimistic/unrealistic imagination and I can just see you bringing home the perfect future spouse for you. I'm gonna be the best mother-in-law ever. {To my son: your wife's cooking will never be as good as mine}... ;)
  • Grandchildren! Yes. I'd like to be called Oma and Jarryd, Opa. We shall spoil you like crazy and leave all the dirty work/clean up for your parents to deal with. It's called...payback! Also, I'm going to have beautiful, long, flowy gray hair like elderly Rose on Titanic. And I'm going to start every wise old story with "when I was your age..."
My naive optimism is adorable, isn't it? I am loving my future children already. I wonder what my Mom will say when she reads this...

Oh The Places We've Been.

It's just a given that when you meet your future husband at Bible school, in a country that is foreign to both of you--in our case, Germany--you're gonna list "traveling" as one of your favourite activities together. The whole love-for-travel thing was a deal-breaker for me, I truly could not have married a guy whose picture-perfect idea of "getting away" was pitching a tent at a nearby campground. (Although I could see Jarryd being keen to that idea...). I need road trips, planes, and trains like I need air!

Our very first trip together as "boyfriend and girlfriend" was a two and a half hour train ride from Friedrichshafen, Germany to Munich, Germany. In 2011!

Not bad for a first trek right?!

Jarryd and I have been married almost exactly a year and a half now! (Dear time, please slow down)! Within such short amount of time, the two of us have been to so many places, together and apart, but mostly together! Being travel buddies is so much fun! We never have a bad moment or fight, we travel just perfectly together. Always smiles and smooth sailing!

...Hahaha! I'm totally kidding.

Traveling really brings out the best AND the worst in us. One of us gets road rage (Jarryd) while the other one (Me) gets annoyed at the one getting road rage, all the while one of us (Me) gets cranky when the other one (Jarryd) misses the exit for Starbucks or McDonalds...on purpose?! Yes it's true, my "hangry" (Angry from being hungry) side effects are super ugly. BUT, road rage and hanger aside, we really do have FUN traveling together, which is all that matters. ;)

For memories sake I decided to create a list along with a picture or two of all the places we have been (Major Cities, States, and Provinces) since our June 2014 wedding! These are in order of date, not significance. Enjoy!

1. Niagara Falls, Ontario, Canada.
After our wedding, we had to go pick up my Visa in Ontario, so we decided to make the most of it and start our Honeymoon early in Ontario!
2. DisneyWorld, Florida
This was Part two of our Honeymoon and it was A BLAST! I can't wait to go again one day! Especially with our future kiddos!
3. Philadelphia, Pennsylvania
When my family came down to visit, we were all tourists for a day and went to the Philadelphia Zoo (America's oldest zoo!) and saw the Phillies play some ball!
4. Blue Ridge Mountains, Virginia
Jarryd and one of his best friends signed up for an entire day (of torture, in my opinion!), a Spartan Race Super. While they tortured themselves, I enjoyed riding the ski lifts and eating hot dogs all day.
5. Rehoboth Beach, Delaware
Jarryd knows how much I love the beach so he surprised me with a day trip to one of the closest beaches to us. It was so beautiful and just what I needed at the time. I think my favourite part of that trip was after the sun had long set, getting our Starbucks and blanket, and sitting on the beach; seeing nothing but the city lights behind us reflecting on the water before us. And there is nothing like the sound of waves crashing on the shore!
6. Washington D.C.
I took the bus down to D.C. to visit my friends Ian and Sarah! It was awesome seeing a whole different side of the city (Georgetown) and not just the monuments.
7. Birmingham, Alabama
Jarryd and I drove here Easter weekend to visit Ian and Sarah and see the city they call home. It was awesome (especially the food!) and wonderfully warm! I can't wait to go again!!
8. Some States (Virginia, Tennessee, and Georgia) we road-tripped through to get to and from Alabama. (Those count, right?)
I specifically remember stopping to eat at a Subway in Virginia and being completely frustrated because I couldn't understand the woman behind the counter. Yes, her southern drawl/accent was THAT thick!
9. New York City, New York!
Four of our cousins flew all the way from Canada for a vacation in NYC and we had the privilege of living close enough to NYC that taking the train up to see them was no problem! And we're so glad we did! It was so much fun!!!
10. Washington D.C
Our first anniversary weekend was spent here! I even wrote a blog post about it, click here! :)
11. New York City, New York
My friend Jolene flew to me from Canada and of course I had to take her to New York!! What an amazing girls' trip! Read more about it here! :)
13. Baltimore, Maryland
We've been here many times, for dinner dates, concerts, and Orioles games! I absolutely love it! It's an incredibly unique area.
14. Alberta, Saskatchewan, and Manitoba (Canada!)
For Canadian Thanksgiving I flew on my own to go home for the first time since our wedding. Read the blog post about it here! :)
15. (Central, or so they say) New Jersey
We drove up to NJ this past weekend to visit our newly-engaged friends and it was awesome seeing their home town/city! I can't even tell you how many times we played CLUE, and we even went to one of those big light shows where a house's Christmas lights are set to music. Super cool!! Oh, and I'm also in love with their Samoyed dog...
16. Winnipeg, Manitoba, Canada
There aren't any photos of this adventure, as it hasn't happened yet! My flight for Canada leaves in two days!

And there you have it! We've been alot of places but there are still many more we have yet to conquer! After our Christmas in Canada we don't have much planned travel-wise, other than a potential weekend in South Carolina with friends. (Hopefully!!)
Boston Massachusetts, and Nashville Tennessee are places that are definitely high on our list! Hopefully one day soon! :)
Do you have any places you'd like to recommend to us?? We'd love to hear about your favourite vacation spots!
